After that they are island tours: Oia, a village or two, a black-sand beach, a viewpoint, sometimes a winery. Lengths run from three to six hours, which is what a typical call allows.
The cable car is run by a foundation the shipowner Evangelos Nomikos endowed in 1979, and the Foundation gave it to the municipality, with its revenue shared among the island's fourteen communities. It is rated at 1,200 people an hour in a three-minute ride. On a four-ship day that capacity is the constraint.
There is no road from the Old Port to Fira. Your choices are the cable car at EUR 10 one way, the footpath, or a mule — and we do not recommend the mules, for the reasons animal-welfare organisations have set out at length.
Two of these excursions lift you off the tender dock by sea and land you elsewhere on the island. On a busy morning that is not a small convenience; it is an hour of your call handed back.
These operators run the same call every week and know what all-aboard means. An independent day in a hire car does not come with anyone tracking your return, and the tender queue at the end is longer than the one at the start.

Work backwards from all-aboard rather than forwards from the tender. Allow forty minutes to get down the cliff and onto a tender at the end, and half an hour at the start for the queue on the ship. That is more than an hour gone.
Check the cable car's season while you are at it. It runs 07:00 to 23:00 from June to August and 07:00 to 22:00 in May, September and October, every twenty minutes. In winter it runs in two short blocks a day.
Then pick one thing. Three and a half hours of real island time does Oia properly, or a village and a beach, but not both plus a winery. The excursions that try are the ones people describe as rushed.
If your ship is in port for twelve hours or overnights, you do not need an excursion built around a tender clock. Book a private day and use the whole of it.
If you want the volcano and the hot springs, a port call will not stretch to it. The full-day boat runs about fourteen hours from a hotel pickup.
If you are a confident independent traveller on a long call, the public bus from Fira to Oia costs a fraction of any of this. You are trading the safety margin for money.
